Ken Crabshaw's Brunch-time Bad-boys
This is a recipe given to me by my comrade Ken.
As promised, and I quote;
"Get some large, flat mushrooms. Peel and de-stalk. Brush the top with a little olive oil and pop them under a hot grill for a couple of minutes. Take them out, flip over and fill with a grated cheese, chopped tomato, (pre-cooked chopped bacon for the non-veggies), chopped green pepper and garlic mixture, then back under the grill for 5 minutes."
I've tried it, but because my mum doesn't like garlic, I put in some chopped, fresh parsley instead.
She liked it.
I liked it.
Ken likes it.
Maybe you wil too.

oh honey, i wish i liked mushrooms! what else do you recommend as a substitute? because those sound kind of like how you would make a chile relleno, which of course is a stuffed anaheim chile after it has been roasted and had its skin taken off. but yeah. sounds nice for sure.
I can see why you might not like mushrooms.
They can be a wet and slimy affair.
Maybe use sweet bell peppers or scoop out the guts of a potato and add that to the mix.

I think I recall Ken posting this on the MB. I mentioned a variant...
So simple but exquisite. Mix breadcrumbs and grated cheese fill the big flat mushrooms and squeeze lemon over them. That's all. Then bake in the oven.

Portobello mushrooms are the most common of the large, flat varieties I think, but any will do.

MB-wise, I'm in pre-Mod hell (and very unfairly, just for once).
ITRW - I've been off work for nearly 18 months as I have Crohn's disease and I've had to have a number of operations (you really don't want to know). I'm back part-time and so not around the MBs as much.
